LA TARTE ALSACIENNE

A typical, and delicious, French dessert from the Alsace Region

Ingredients
(for 6 – 8 persons)


Pie crust:
- 200 g of flour
- 10 g of butter
- 40 g of sugar
- 1 egg yolk
- 20 cl of water
- A pinch of salt
- 3 or 4 apples (depending on their size)

Crème alsacienne:
- 2 eggs
- 25 cl of sour cream (crème fraîche)
- 100 g of sugar
- 1 small packet of vanilla sugar

Préparation:
Preparation

Pie crust:
Put the flour in a large bowl, add the butter cut into very fine pieces and mix it together with your hands.
Make a fountain (a hole) in the middle; add the egg yolk, the sugar, the salt and the water.
Blend everything together by incorporating the flour/butter mixture little by little and knead it until the dough is smooth.
Let it rest for a few minutes.

Pie:
Roll out the crust with a rolling pin and place it in a round pie tin.
Peel and cut the apples into thin slices and distribute them on the crust in an even pattern.

Preheat the oven to 200°C (thermostat 6-7).
In a bowl, mix the sugar, the eggs, the vanilla sugar and the sour cream. Pour this mixture over the apples.

Bake the pie in the oven for about 30-40 minutes.
