LE SAUMON AU PASTIS
Pastis is a very popular drink for the “aperitif” in the south of France. We can also use it to make good recipes like this one!
For 4 people
Ingredients: 5 cl of Pastis ou Ricard, 20 cl of cream, 4 filets of fresh salmon, 1 tomato cut in small squares, ½ onion roughly chopped, 1 glass of white wine (25 cl), 5 cl of pastis or Ricard

Turn on your oven to 150 ° (Celsius).
Take out the bones of the salmon.
Cook the salmon in a frying pan with some olive oil.
When the salmon is cooked, put it on a dish and keep it warm in the oven.
In the same frying pan, clean out the grease and add the chopped onion.
Fry it for 2 minutes, then add the white wine. Let it cook for a few minutes.
Add the Pastis and the tomato. Let it cook for a few minutes.
Add the cream, salt and pepper and cook it for a few minutes until the sauce starts to thicken. Taste the sauce and see if it needs more seasoning.
Pour the sauce on the salmon and serve it with a green vegetable (broccoli, green beans…) and sauteed potatoes.
