A famous and tasty vegetable dish from the south of France.
Great to go along meat or fish or with an omelette.
For 4 people
Ingrédients: 1 eggplant diced, 2 green bell peppers roughly chopped, 4 tomatoes roughly chopped, or 2 cans diced tomatoes, 3 to 4 small zucchini sliced, 2 tablespoons olive oil, 2 cloves garlic, chopped, 1 large onion thinly sliced, some dried leaf basil, oregano and thyme, salt and pepper.
In a saucepan, heat olive oil.
Add garlic and onions and cook, stirring often, until softened, about 6 to 7 minutes.
Add the eggplant and stir until covered with oil. Add peppers, stir.
Cover and cook for 10 minutes, stirring occasionally.
Add tomatoes, zucchini, and herbs. Add salt and pepper; mix well.
Cover and cook over low heat about 15 minutes.
Taste and see if it needs more seasoning.
